Akki roti is a traditional delicious staple breakfast from Karnataka. The basic ingredient being rice flour and Indian spices and can be served with jaggery, home made freshbutter or chutney of your choice.
Sharing my recipe which I have learnt from my mother, there may be slight variation in the preparation at every household.
Have made rice flour by washing the whole rice and later drying it. Once dried used a mixer to make rice flour.
Ingredients:
· Rice flour – 2 cups
· Ginger – I inch (finely chopped)
· Green chilies – 1-2 (finely chopped)
· Curry leaves ((finely chopped))
· Onion – 1 big (finely chopped)
· Coriander leaves (finely chopped)
· Chunks of fresh coconut – 2 tbsp
· Cumin seeds – 1 tsp
· Salt
· Water
· Oil/Ghee
Method:
· Take a bowl add rice flour in it, add ginger, green chillies, curry leaves, oinion, coriander leaves, coconut chunks, cumin seeds and salt.
· Now add water and start mixing the flour.
· Knead to form a smooth and soft dough.
· Let it rest for 10-12 minutes.
· Turn on the tawa and take a damp muslin cloth, take a ball sized dough and tap it gently to make a thin rotti.
· Now slowly lift the cloth and turn it over the tawa. You will be able to remove the cloth.
· Spread oil/Ghee from the corners for the rotti and cover it with a lid.
· Remove the lid and flip it gently and cook the other side.
· Once again flip it and remove it from the flame once it is cooked and is slightly brown in colour.
· Serve it hot with freshly made butter or jaggery or chutney of your choice.
