EGGLESS RAGI CHOCOLATE CAKE

Eggless Chocolate Cake made with Ragi flour and Wheat flour to celebrate Women's Day. A Healthy guilt free Cake as it is sweetened with jaggery. Ingredients: · Ragi Flour – ¾ cup · Whole Wheat Flour – ¾ cup · Cocoa Powder - 4 tbsp · Baking Powder – 1 ½ tsp · Baking Soda – ½ tsp · Jaggery Powder – ½ cup and 2 tbsp · Curd – 1/3 cup · Milk – ¾ cup · Vanilla Essence - 1 tsp · Salt - a pinch · Oil/ Melted ghee / Melted Butter – ½ cup For topping: · Whipping cream · sprinklers (optional)

Method: · Take curd in a mixing bowl and add baking soda. Give it a good mix and let it rest for 5 minutes. It will turn frothy. · Take a mixing bowl add jaggery powder and oil/ghee/butter, give it a good mix with a balloon whisk. Try to incorporate more air in it. · Now add the frothy curd mixture, milk, cocoa powder and give a good mix. · Sift in ragi and wheat flour along with baking powder. · Add vanilla essence and salt. · Now fold in all the ingredients slowly, but do not overmix it. Mix it until the batter is of a smooth consistency. · Now pre heat the oven and pour the above batter in a greased baking tray, lined with a parchment paper. · Bake the cake at 180 degrees Celsius for 25-30 minutes or until the cake is baked properly. · Now you can top the cake with whipped cream, this completely optional. · Now garnish your cake with sprinklers of your choice. · Healthy Eggless Ragi Chocolate cake is ready to be served.
