A fusion recipe that is a popular street food in Mumbai. This is made using a dosa batter from South of India, wherin the dosas are smeared with butter and spicy mixed veggies. Today being a patriotic day, I have served these dosas with Tri colour coconut chutney depicting our flag colour.

Ingredients:
For Each Jini Dosa
· Dosa Batter
· Oil – 1 tsp
· Butter - 1 tbsp
· Veggies
Onion – 1.5 tbsp (finely chopped)
Capsicum – 2 tbsp (finely chopped)
Cabbage – 1.5 tbsp (finely chopped)
Carrots – 1 tbsp (grated)
Coriander Leaves - 1 tbsp
Spring onion greens – 1 tbsp
· Schezwan Chutney - 1 tbsp
· Ketchup - 1 tbsp
· Chat Masala – ¼ tsp
· Pav Bhaji Masala - ½ tsp
· Salt
· Grated Cheese Cubes – 2-3 tbsp
Method:
· Chop the veggies and keep it aside.

· Take a dosa pan/tawa add oil and smear it all over the pan.
· Once the tawa is heated add the Dosa batter spread it nicely, keep the flame on low heat.
Drizzle oil from the sides of the dosa.
· Next add in butter, add all the veggies, schezwan chutney, ketchup, chat masala, pav Bhaji Masala. Mix it well and spread it all over dosa. Add spring onion greens.
· Now transfer this dosa on a chopping board or big plate. Using a pizza cutter cut the dosa into four stripes.
· Next, roll each strip and serve it in standing position topped with some spring onion greens and grated Cheese.
· Mumbai street style Jini Dosa is ready to be served with coconut chutney of your choice.
