KANDA POHA

Kanda Poha is a mouth watering and yummy traditional recipe from Maharashtrian cuisine, usually served for breakfast or even as snack and served with Masala chai, and loved by all. It’s a simple dish consisting of flattened rice with onions and peanuts.

Ingredients:

· Pressed rice (Thick Poha) – 2 cups

· Ghee/Oil – 2 tbsp

· Mustard seeds – 1 tsp

· Cumin seeds – 1 tsp

· Slit or chopped green chillies – 2 or 3

· Few curry leaves

· Peanuts – ¼ cup

· Onion – 1 big (chopped)

· Boiled and diced potatoes (optional) – 1

· Turmeric powder – ¼ tsp

· Salt to taste

· A pinch of Sugar

· Freshly grated coconut – 1.5 tbsp

· Lemon juice

· Finely chopped Coriander leaves



Method:

· Wash the poha or pressed rice under running water, drain excess water and leave it aside for 5-8 minutes.

· Heat oil/ghee in a pan and add the peanut, fry till it starts to crackle. Remove and keep it aside.

· In the same pan, add mustard seeds and once they splutter, add cumin seeds and sauté for half a minute.

· Add green chilies, curry leaves, onion and sauté till the onion is slightly golden brown. Add the boiled and diced potatoes and fried peanuts. Sauté it well.

· Now add the poha/pressed rice, turmeric powder, salt, and sugar and mix well.

· Add freshly grated coconut and squeeze lemon juice. Mix well.

· Serve hot garnished with coriander leaves.
