MANGO SHEERA/ KESARI

Mango sheera/ kesari is one of the most popular summer dessert recipes. Its sweet, tender, rich, fruity flavored and utterly scrumptious. It is mostly relished for breakfast or as a dessert after lunch. Made this delicacy to start my special day with my family. A delicacy to be tried in your kitchen during summers.


Ingredients:
· Rava/Semolina – 1 cup
· Mango puree – 1 cup & mango pieces optional
· Sugar – ¾ cup (adjust as per the sweetness of the mango puree)
· Water – 2 to 2 ¼ cups of Water + milk (1:1)
· Ghee – ¼ cup + 1 tbsp
· Cashew nuts – 10-12 cut into halves (optional)
· Saffron strands
Method:
· Take a kadai with very little ghee in it, add cashew nuts, roast on low flame until they turn golden brown. keep it aside. Adding cashews is completely optional.
· Take a kadai, add rava and dry roast for 3-4 minutes.
· At the same time keep one pot with water, let it boil on medium low flame.
· Now add the ghee and fry the rava, till it turns aromatic.
· Now pour the hot water over it, mix it once, add saffron strands and cover the kadai with a lid for 2-3 minutes.
· Now add sugar, give a good mix and again cover for few more minutes.
· Finally add the mango puree and fried cashew nuts and mix it well. Cover for 2-3 minutes.
· Mango sheera/ Kesari is ready to be served. You can top it with mango pieces while serving.
*** You can use milk and water in 1:1 ratio, if you wish to.
