ROSE COOKIES (CHRISTMAS SWEET)

☃️❄️🧑‍🎄🎄Christmas, season of joy and sharing.

Prepared South Indian Delicacy, that is Rose Cookies to celebrate the festive season🎄🧑‍🎄. This is the typical Anglo Indian cookie and the favorite among Indian Christians during Christmas season.☃️❄️🧑‍🎄🎁🎄 Also known as acchapams.

Ingredients: · Egg – 1 · Salt – ¼ tsp · Powdered Sugar – ¼ cup · Maida (All-Purpose Flour) – 2 tbsp · Whole Rice – 2 cups · Coconut Milk - 1 cup · Black Sesame Seeds – ¾ tbsp · Oil for frying


Method: · Wash and soak rice for a minimum of 2 hours. Drain it well and make a fine powder using a mixer jar. · Take out the coconut milk, for that grind the coconut along with little water and using a clean muslin cloth filter the milk in a bowl. Remember we need to use thick milk, so take out as much milk as possible. · In a bowl, combine egg, sugar and coconut milk and beat well. Add all the dry ingredients and mix well into a smooth thick batter. · In a wide pan, add oil and let it get piping hot, place the mould in the piping hot oil for a minute, dip it in the prepared batter. The batter would stick to the mould, ensure it's not completely dipped. · Once batter is stuck, place it in the hot oil and in some time the batter would get loosen up in the shape of a flower and fall apart from mould. · Fry till they turn golden brown on both sides, do not over fry. Cookies would get hard, as they cool down
