ALOO METHI (No onion garlic)

Aloo Methi is a classic healthy recipe that is common in all the states of India, but with a few changes in the ingredients here and there. My version is a simple basic one from the south which is without onion & garlic.

Nice to relished with dal or chapati.

Ingredients:

· Fenugreek leaves (Methi) – 2 cups (roughly chopped)

· Potatoes – 2 medium sized (diced)

· Oil – 1.5 tbsp

· Mustard seeds – ¾ tsp

· Cumin seeds – ¾ tsp

· Hing – ¼ tsp

· Red chili powder – 1 ¼ tsp

· Turmeric powder – ¼ tsp

· Coriander powder – 1 tsp

· Jaggery – ½ tbsp

· Salt – as per your taste

· Grated coconut – 2 tbsp

Method:

· Take a kadai, add oil, now add mustard seeds and cumin seeds, let it splutter.

· Now add hing and diced potatoes. Give a good mix.

· Cover and cook for 4-5 minutes.

· Now add the chopped fenugreek leaves and cover it. Open the lid an check whether potatoes are cooked well.

· Now add the chili powder, turmeric powder, coriander powder and salt. Mix it well.

· Add jaggery, give a good mix.

· Finally garnish with grated coconut.

· Your Aloo Methi is ready to be served with dal rice and chapati.
