BAJRA METHI PARATHA & BESAN KI KHATTI MEETHI CHUTNEY/BESAN KADHI

Winter speciality traditional Bajra and Methi ke parathe with delicious Kadhi chutney, can call it Besan ki khatti meethi chutney as well. And not to forget the winter yummilicous sweet Gajar ka Halwa. Ingredients: BAJRA METHI PARATHA · Bajra Atta (Pearl Millet Flour) – 1 ½ cups · Wheat Flour – ½ cup · Ginger garlic paste – 1 tbsp · Black pepper powder – ½ tsp · Ajwain – ½ tsp · Hing – ¼ tsp · Green chillies – 1 or 2 finely chopped · Seasame seeds -1 tbsp · Jaggery powder or Sugar – 1 tbsp · Red chilli Powder – 1 tsp · Turmeric Powder – ¼ tsp · Coriander leaves – handful · Fenugreek leaves – 2 cups · Ghee – 1 tbsp · Curd – ¾ cup · Salt · Water BESAN KI KHATTI MEETHI CHUTNEY/BESAN KADHI · Besan/Gram flour – 1/3 cup · Water – 2 cups · Red chilli Powder – ½ tsp · Turmeric Powder – ¼ tsp · Salt · Oil – 1 tsp · Mustard seeds – ½ tsp · Cumin seeds – ½ tsp · Hing – ¼ tsp · Green chilli – 1or 2 finely chopped · Curry leaves – 7-8 · Ginger garlic paste – 1 tsp · Sugar – 1 tbsp · Coriander leaves Method: BAJRA METHI PARATHA · Add all the above ingredients and make a dough that is not too soft neither too hard. · Let it rest for 10 mins. · Start making small balls and roll it. · Fry by applying ghee/oil and your paratha is ready to be served.

BESAN KI KHATTI MEETHI CHUTNEY/BESAN KADHI · Take a bowl add besan/gram flour, red chilli powder, turmeric powder and salt. Mix well and keep it aside. · Take a kadai, add oil, mustard seeds, cumin seeds, let it splutter. · Add hing, green chilies, curry leaves and ginger garlic paste. Fry for 2-3 minutes. · Now add the besan mix and stir well. Bring it to boil and add sugar. · Garnish it with coriander leaves.
