Egg drop gravy cooked using coconut milk is a flavorful dish with tomatoes, Indian spices and egg. This is a simplest egg masala you can imagine. It can be made in a jiffy and taste great with either rice or any Indian bread.

Ingredients:
· Oil - 2 tbsp
· Onion – 2 medium sized (finely chopped)
· Ginger paste – 1 tsp
· Garlic paste - 1 tsp
· Tomatoes – 2 (finely chopped)
· Water – ¼ cup
· Turmeric - 1 tsp
· Red Chilli Powder - 1 tsp
· Garam masala – 1 tsp
· Salt
· Coconut Milk – ¼ cup
· Water – ½ cup
· Eggs – 4-5
· Salt
· Red Chilli Flakes – ½ tsp
· Green Chillies – 1-2 (finely chopped
· Fresh Coriander leaves (finely chopped)
Method:
· Take a kadai with oil in it. Add chopped onions and sauté till the onions turn brown in colour.
· Now add crushed ginger garlic or paste, sauté till the raw smell of ginger garlic goes away.
· Add tomatoes and sauté it well. Now add little water and cover it with a lid for
2-3 minutes.
· Now add the spices, salt and give it a good mix.
· Now to give it a creamy texture add coconut milk and little water. Give it a good mix.
· Now keep the flame on low heat and slowly crack open one egg and drop it in the masala.
· Drizzle little salt and chilli flakes on the egg. Few green chillies and fresh coriander leaves.
· Cover it with a lid for 5 minutes or until the eggs are cooked properly.
· Serve it hot with rice or any Indian bread of your choice.
