EGGLESS PLUM CAKE

Christmas is incomplete without some delicious Plum Cake right? This bake was on my list since the time my favourite Chef @shivesh17 had posted his reel. Had kept all the ingredients ready but could not bake it on the Christmas day🧑‍🎄🎄✨❄️.Finally, baked this to celebrate the last day of Year 2023 with my family 🎉🥳. This is an eggless version made with the warmest of spices, which has no alcohol and requires no advance soak.Thanks @shivesh17 for this amazing recipe ❤️🤗Happy New Year 2024🎉✨🥳 to all my friends and their families ❤️🤗

Ingredients:

For the cake 

·        Maida - 1 + ½ cup

·        Cinnamon – ¼ tsp

·        Ginger – ⅛ tsp

·        Clove - ⅛ tsp

·        Orange zest – 1 tsp

·        Baking powder – 1 tsp

·        Baking soda – ½ tsp

·        Vegetable oil – ½ cup

·        Brown sugar – ¾ cup

·        Yogurt – 1 cup

·        Vanilla extract – 1 tsp

 

For soak 

·        Orange juice – ⅓ cup

·        Water - ⅓ cup

·        1 tablespoon lemon juice – 1 tsp

·        1 cup tutti frutti – ½ cup

·        Raisins – 1 tbsp

·        Dried apricots – 1 tbsp

·        Dried cranberries - ⅛ cup

·        Prunes - ⅛ cup

 

For folding 

·        Almonds

·        walnuts

·        cashews

·         

Method:

·        In a saucepan, take orange juice, lemon juice and water.

·        Add tutti frutti, raisins, dried apricots, dried cranberries and prunes to the juice mix and cook till the mixture thickens and the dry fruits absorb all the juices. Set aside.

·        Pre-heat the oven to 160 degrees Celsius.

·        In a bowl whisk together flour, baking powder, baking soda, the spices and orange zest and set aside.

·        Whisk together brown sugar and oil in a separate bowl until pale and well combined. Now add the yogurt to the oil and sugar mixture and mix well.Add the vanilla extract.

·        Gently fold in the dry ingredients and mix until everything is well combined and there are no large flour pockets in the batter. Do not over mix.

·        Keep a small portion of the soaked dry fruits aside and fold in the rest along with the chopped walnuts, almonds and cashews in the batter and transfer the batter to the prepared baking tray.

·        Bake at 160C for 50-55 minutes or only until a skewer inserted in the centre comes out clean.

·        Enjoy the cake with your family and friends.
