GREEN GARLIC THECHA (HARE LEHSUN KI CHUTNEY)

A winter specialty, lip smacking hare lehsun ki chutney, is a must try during this season. Goes well with any bhakri or roti, can also be served as a side dish. I have served it with Bajre ki roti.

Ingredients:

· Fresh Green Garlic – 100 gms

· Fresh coriander leaves – 1 cup

· Kashmiri red chilli powder – 1 tbsp (adjust as per your preference)

· Tamarind (very small ball)

· Oil – 1.5 tbsp

· Salt (adjust as per your preference)


Method:

· Wash the green garlic and coriander leaves very nicely.

· Keep it in a strainer so that the water drains off.

· You can separate the garlic from the green leaves. Roughly chop the garlic leaves.

· Now take a small mixer jar add the garlic, garlic leaves, coriander leaves, tamarind and salt.

· Grind it just for few seconds, check it, again grind only for few seconds. Now add Kashmiri red chilli powder and oil. Grind it again. Remember we are not looking for a very fine paste, it should be coarse.

· Alternately, you can grind the mixture on a Pata (Indian equipment to grind chutney). If you have one, do it on that, it tastes great.

· You can serve this thecha with any bhakri, roti or as a side dish with your meal.
