💚💚Lasooni 🧄palak, also called lehsuni🧄💚 palak, is a very flavourful garlicky spinach curry that is not only very scrumptious but extremely healthy and easy to prepare. Have used the fresh 🧄lehsun to prepare this dish. Served with phulka's. 💚💚
Ingredients:
· Spinach (Palak) – 2 bunches
· Oil/ Ghee – 1½ tbsp
· Cumin seeds - 1 tsp
· Dry Red Chillies – 1-2 (broken)
· Garlic – 1.5 tbsp (crushed) can use fresh garlic during winter season
· Onion – 1 big size (chopped)
· Crushed coriander seeds - 1.5 tsp
· Green chillies – 2-3 slit lengthwise
· Gram flour – 1 tbsp
· Turmeric powder – ¼ tsp
· Salt to taste
· Water to adjust the consistency
· Garam masala – ½ tsp
For 2nd tadka:
· Ghee - 1 tbsp
· Cumin seeds – ½ tsp
· Whole red chillies - 1 (broken)
· Garlic – 8-9 cloves (sliced)
Fresh garlic leaves for garnishing

Method:
· Clean the spinach & wash it thoroughly, for blanching the spinach, set water for boiling in a pot, add a pinch of salt and the washed spinach leaves.
· Cook for 15-30 seconds, immediately dip into ice cold water to retain its colour.
· Now transfer the blanched spinach in a blending jar, just pulse it once or twice, remember not to make a fine paste. Keep this aside.
· Set a pan on medium high heat, add oil/ ghee, cumin seeds, broken dry red chillies, crushed garlic, chopped onions and crushed coriander seeds. Cook until the garlic and the onion are lightly golden in colour.
· Now add the green chillies, gram flour, turmeric powder. Cook on a high flame for 30-40 seconds.
· Now add the blanched and roughly crushed spinach, water, salt and mix well.
· Cook on a high flame for 2-3 minutes, add garam masala powder. Give a good mix.
· Now take a tempering pan heat ghee and add cumin seeds, broken red chillies, garlic and let it cook until garlic turns lightly golden brown in colour.
· Now pour over the cooked Lehsuni Palak. Give a good mix.
· Garnish with freshly chopped garlic leaves.
