PYAAZ TAMATAR KI SABJI (Onion and Tomato sabzi)

Easy vegetable recipe that takes very little time to cook and can be enjoyed to the core, especially when it is served with parathas. I have served this with dal, rice, raw mango coconut chutney and square parathas.
Ingredients:
· Oil – 2 tbsp
· Small Onions - 5-6
· Tomato – 4 medium sized
· Garlic Clove – 4-5
· Ginger – 1 inch
· Melon Seeds – 2 tsp
· bay leaf – 1-2
· Cinnamon stick – 1 inch
· Black Cardamom – 1
· Clove – 2-3
· Black Pepper - 4-5
For preparing Sabzi:
· Oil – 1.5 tbsp
· Cumin seeds – 1 tsp
· Hing – ¼ tsp
· Whole dry red chilies – 2-3
· Kasuri methi – 1 tsp
· Turmeric powder – ¼ tsp
· Kashmiri red chili powder – 1.5 tsp
· Coriander and cumin powder – 1 tbsp
· Garam masala – ¼ tsp
· Salt
· Pinch of sugar
· Amuchur powder – ¼ tsp
· Fresh cream/ Malai – 1.5 tbsp
· Green Chillies Slit – 2-3
· Fresh coriander leaves
Method:
· Take onion and cut into 4 Pieces and cut the tomatoes also.
· Take a Kadhai add oil and add the onion cubes and sauté it on high flame and now add diced tomatoes.
· Sauté for 2-3 min and remove half of the sauteed onion and tomatoes in a plate.
· Keep half in the same Kadhai and now add melon seeds, garlic, ginger, add bay leaf, cinnamon stick, black cardamom, clove, whole black pepper. Sauté on high flame and then add water.
· Mix and cook for 2-3 mins, let it cool and then grind into fine paste.
· Now take a Kadhai and add Oil, cumin seed, hing, whole dry red chillies, kasuri methi and turmeric powder. Mix it well.
· Now add the grounded paste and cook for 4-5 mins.
· Now add kashmiri red chilli powder, coriander and cumin powder, garam masala powder, Salt and pinch – Sugar.
· Cook till oil separates and now add amchur powder. Sauté it well and add malai or fresh cream.
· Let it cook for a minute and now add boiling water. Now add the sauteed onion, tomato that was kept aside and slit green chillies. Mix it well.
· Cover and cook for 2 mins and garnish with Coriander Leaves.
· Serve hot with paratha, chapati or roti.
