RAJMA CHAWAL (one method)

Delicious and flavourful curry made with red kidney beans. Rajma Chawal is by far one of the most comforting foods specially in Punjab and a staple in entire North India.
Ingredients:

· Rajma (Kidney Beans) – 1 cup
· Ghee - 2 tbsp
· Cumin seeds – 1 tsp
· Onion – 2 medium (finely chopped)
· Ginger paste – 1 tbsp
· Garlic paste – 1 tbsp
· Turmeric - 1 tsp
· Red Chilli Powder - 2 tsp
· Coriander powder - 1 tsp
· Garam masala – ½ tsp
· Tomato puree – 1 cup (3 medium tomatoes)
· Kasuri Methi – 1 tsp
· Salt
· Fresh Coriander leaves (finely chopped)
Method:
· Take a bowl and add rajma in it & soak it overnight.
· In a pressure cooker add water in it and then add soaked rajma with some salt.
· Let it cook on medium flame and let it whistle 3-4 times. Allow it to cool down.
· Press the rajma with your fingers to check whether the rajma is cooked properly.
· Take a large pan and add ghee in it, add cumin seeds, add finely chopped onions, ginger garlic paste. Saute till they turn brown.
· Now add salt, turmeric, red chili powder, coriander powder. Saute for 3-4 minutes
· Now add tomatoes, mix well and saute till they start leaving their oil.
· Now add the cooked rajma and give a good mix. Cook for 7-8 minutes.
· Now add little garam masala and reserved rajma water. Mix well and simmer on medium flame for 4-5 minutes. Add Kasuri methi, give a good mix.
· Finally add some fresh coriander leaves and serve with hot rice.
