Sabudana vada is a popular crisp fried snack made with tapioca pearls (sago), roasted peanuts, boiled potatoes and Indian spices. Made during festivals as this is immensely popular as a fasting food. Today I have made it guiltfree by making it in Appe pan.

Method:

· Wash the sabudana 3-4 times in running water and soak it in water for at least 2-3 hours.

· If you find the sabudana dry, stir it with spoon or fork and add 2-3 tbsp water.

· Take a mixing bowl and combine all the ingredients with soaked sabudana.

· Apply oil on your palms, take a spoonful of mixture and make balls using your hands.

· Heat the appe pan and drizzle oil and place the the sabudana vadas. Now cover it with a lid, after few mins flip it and cook it I uncovered, drizzle oil from the sides.

Keep the heat on medium to low.

Cook it until it turns crispy and golden brown.

· Serve the vadas hot and crispy with sweetened curd, sauce or chutney of your choice.
