Eggless Rava Cake (Suji Cake)

Looking for a simple homemade cake 🎂 that is soft, moist, and packed with the comforting aroma of cardamom? This Eggless Rava Cake is made with everyday pantry ingredients and comes together with minimal effort. A blend of rava (semolina) and flour gives the cake a beautiful texture, while ghee and rose water add a rich flavour and delightful fragrance. Perfect with a cup of tea or coffee ☕!



Ingredients:

·       Rava (Suji) – 1 cup

·       Sugar – ¾ cup

·       All-purpose flour (Maida) – 1 cup

·       Baking powder – ½ tsp

·       Baking soda – ½ tsp

·       Cardamom powder – 1 tsp

·       Milk – 1½ cups

·       Ghee – ½ cup

·       Rose water – 1 tbsp


Method:

·       Preheat the oven to 180°C and lightly grease or line a loaf tin with baking paper.

·       Add the rava and sugar to a blender and pulse for a few seconds until the rava becomes slightly finer.

·       Transfer the blended mixture to a large mixing bowl. Add the maida, baking powder, baking soda, and cardamom powder. Mix well.

·       Pour in the milk, ghee, and rose water. Whisk until you get a smooth, lump-free batter.

·       Transfer the batter into the prepared loaf tin and gently level the top.

·       Bake for 40–45 minutes, or until a skewer inserted into the centre comes out clean.

·       Allow the cake to cool in the tin for 10–15 minutes before unmoulding. Slice and serve warm or at room temperature.


   Tips

·       Use fine rava or pulse regular rava for a softer crumb.

·       Do not overmix the batter once the wet ingredients are added.

·       Let the cake cool completely before slicing for neat, even pieces.

·       Enjoy it plain or with a drizzle of honey, a dusting of powdered sugar, or a cup of hot chai ☕.
